Ingredients
- 2 1/2 cups sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup solid vegetable shortening
- 1 cup sugar
- 2 eggs
- 1 tablespoon grated orange rind
- 1/2 cup orange juice
- 1/2 cup chopped pecans
- Orange Icing(below)
Preparation
Step 1
1. Preheat oven to 375 degrees. Coat cookie sheets with nonstick cooking spray. Sift flour, baking powder, salt onto waxed paper. 2. Cream shortening, sugar, eggs until fluffy. Mix in orange rind, juice. Stir in flour mixture until blended. Mix in pecans. 3. Drop dough in rounded teaspoonfuls onto cookie sheets leaving 3 inches between cookies.4. Bake in 375 degree oven for 12 to 15 minutes until brown. Remove to wire rack. Frost with Orange Icing while warm.
Orange Icing: Combine 2 tablespoons vegetable shortening, 2 cups sifted confectioners' (10X) sugar, 1 teaspoon grated orange rind in bowl. Gradually stir in 2 to 3 tablespoons orange juice until good consistency. Makes 1 2/3 cups.
