Ingredients

  • 1/4 C. Butter
  • 1/3 c. Chopped onion
  • 1/3 c. Chopped leek
  • 1/3 c. Chopped celery
  • 1/3 c. Chopped green pepper
  • 1/4 c. Flour
  • 4 c fish stock or water
  • Salt & pepper
  • 1/2 bay leaf
  • Dash thyme
  • 1/3 c. Diced potatoes
  • 2 tbsp dry white wine
  • 1/2 c. Chopped clams or 1-4 oz can
  • 6 tbls hot whipping cream

Preparation

Step 1

Melt butter in sauce pan. Add onion, leek, celery, greens pepper and cook till tender. Stir in flour. Reduce heat and cook slowly 10 min. Add bay leaf & thyme. Bring to boil stirring then add potatoes & wine reduce heat & simmer 30 min. Add clams & cook 5 min. Just before serving stir in hot cream.
