Hungry Tiger Clam Chowder

Ingredients
- 1/4 C. Butter
- 1/3 c. Chopped onion
- 1/3 c. Chopped leek
- 1/3 c. Chopped celery
- 1/3 c. Chopped green pepper
- 1/4 c. Flour
- 4 c fish stock or water
- Salt & pepper
- 1/2 bay leaf
- Dash thyme
- 1/3 c. Diced potatoes
- 2 tbsp dry white wine
- 1/2 c. Chopped clams or 1-4 oz can
- 6 tbls hot whipping cream

Preparation
Step 1
Melt butter in sauce pan. Add onion, leek, celery, greens pepper and cook till tender. Stir in flour. Reduce heat and cook slowly 10 min. Add bay leaf & thyme. Bring to boil stirring then add potatoes & wine reduce heat & simmer 30 min. Add clams & cook 5 min. Just before serving stir in hot cream.
