Ingredients

  • 1/4

    C. Butter

  • 1/3

    c. Chopped onion

  • 1/3

    c. Chopped leek

  • 1/3

    c. Chopped celery

  • 1/3

    c. Chopped green pepper

  • 1/4

    c. Flour

  • 4

    c fish stock or water

  • Salt & pepper

  • 1/2

    bay leaf

  • Dash thyme

  • 1/3

    c. Diced potatoes

  • 2

    tbsp dry white wine

  • 1/2

    c. Chopped clams or 1-4 oz can

  • 6

    tbls hot whipping cream

Directions

Melt butter in sauce pan. Add onion, leek, celery, greens pepper and cook till tender. Stir in flour. Reduce heat and cook slowly 10 min. Add bay leaf & thyme. Bring to boil stirring then add potatoes & wine reduce heat & simmer 30 min. Add clams & cook 5 min. Just before serving stir in hot cream.
