Garlic Roasted Potatoes W/Marinated Artichokes

  • 1 1/2 lbs. red or white potatoes, cut into 1/2 inch slices
  • 2 6 oz. jars of quartered marinated artichoke hearts
  • 1 head of galic, separated and peeled
  • 1 Tbsp fresh rosemary gently crushed
  • salt and pepper



Step 1

Drain artichoke hearts reserving marinade. Pour marinade into the bottom of a 9x13 inch baking dish. Add potatoes, artichokes and garlic. Toss with marinade until thoroughly coated. Sprinkle rosemary on top, add a bit of salt and pepper. Then cover the pan with foil and bake for 15 minutes. Remove the foil and continue baking until the potatoes and garlic are tender and beginning to brown, about 35-50 miniutes. Adjust the seasoning and serve.
