Ingredients
- 1 large head broccoli (about 1.75 lbs)
- 3 T olive oil
- 1/2 t salt
- 1/2 t sugar
- ground black pepper

Preparation
Step 1
Adjust oven rack to lowest position. Place large baking sheet on rack and heat oven to 500°. Cut broccoli at juncture of florets and stems. Remove outer peel from stalk. Cut stalk into 2-3" lengths. Place broccoli in bowl and drizzle with oil and toss with salt, sugar and pepper to taste.
Working quickly, remove baking sheet and place broccoli evenly flat side down. Return to oven and roast 9 - 11 min. until florets are lightly browned.
