Butternut Squash Muffins

Ingredients

  • 1 cup grated butternut squash
  • 1 cup white whole wheat flour
  • 1 1/2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar, packed
  • 1/2 tsp. cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons canola oil
  • 1 egg or 2 egg whites
  • 1/2 cup of low-fat milk

Preparation

Step 1

1. Heat oven to 350 degrees.
2. Prepare muffin cups with paper baking cups or nonstick cooking spray.
3. In a medium bowl, stir together grated squash, brown sugar, and maple syrup. Let sit for 10 minutes.
4. In a larger bowl, combine flour, baking powder, and salt.
5. Add squash mixture to flour mixture. Add the remaining ingredients and stir until flour mixture is fully moistened; milk egg and canola oil. Do not overmix.
6. Spoon butter into prepared muffin cups until about two-thirds full.
7. Bake muffins for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
