Moroccan Cauliflower Salad

  • 1/2 cup white balsamic vinegar
  • 3 tbsp. EVOO
  • 1 tsp. honey
  • 1/4 tsp. ground cumin
  • 1 large cauliflower, broken into large florets and thinly sliced on a mandoline
  • 1 cup shelled pistachios, lightly toasted
  • 3/4 cup finely chopped dried apricots
  • 3 scallions, thinly sliced
