Ingredients

  • 2 duck breast fillets skin and fat removed
  • 1 garlic clove finely chopped
  • 1 tbsp brown sugar
  • 1/2 cup white rice vinegar
  • 1 small red chile finely chopped
  • salt pinch
  • 1 green papaya
  • cilantro leaves and pinuts to garnish.
  • Marinade
  • 2 tsp clear honey
  • 1 shallot finely chopped
  • 2 garlic cloves finely chopped
  • 1 lemon grass stalk finely chopped
  • pinch five spice powder
  • pinch ground cinnamon
  • 1 small red chile finely chopped
  • salt and pepper

Preparation

Step 1

Mix all the marinade ingredients in a bowl.Add the duck fillets,cover and leave to marinate for 2-3 hours.
Put the duck fillets and marinade in a rosting pan and rost in a preheated oven,300 F ,for 1 hour.Remove the fillets and allow to cool then cut into slices.
Combine the garlic,sugar,vinegar,chile and salt,stir in the papaya shreds then add the duck.To serve,sprinkle with cilantro and peanuts.
