Ingredients
- 1/2 lb (250 g) snow peas, trimmed
- 1 tbsp (15 mL) olive oil
- 1 large roasted red pepper, diced into 1/4-inch (6mm) squares (see note)
- 1 tbsp (15 mL) balsamic vinegar
- 1/2 tsp (2mL) granulated sugar
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Bring a large pot of water to boil. Add the snow pears and cook 30 seconds. Drain well, cool in ice-cold water, and then drain well again (can be made to this point several hours in advance, store in the fridge until needed). Place the oil in a large skillet and set over medium-high heat.
When hot, add the snow pears and cook 1 minute. Add the remaining ingredients and cook 1 minute.
