BLUEBERRY OAT MUFFINS

Ingredients

  • TOPPING:
  • 1 1/4 cups flour
  • 1 cup quick cooking oats
  • ½ cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1/4 tsp salt
  • 2 egg whites
  • ½ cup water
  • 1/3 cup vegetable oil
  • 1 cup fresh or frozen blueberries
  • 2 tbsp sugar
  • 1/4 tsp ground cinnamon

Step 1

In a bowl combine flour, oats, sugar, baking powder, baking soda, and salt. Set aside. In another bowl beat egg whites, water, and oil. Stir into dry ingredients just until moistened. Fold in blueberries. Fill paper line muffin cups or muffin cups coated with nonstick cooking spray - fill 3/4ths full. Combine sugar and cinnamon; sprinkle over muffins. Bake at 400 degrees for 18 to 22 minutes. Cool 5 minutes and then remove from pan.
