Ingredients
- 1 tbsp. green chilies, chopped
- 1/4 cup red pepper, chopped
- 1 15 oz. can black beans, drained & rinsed
- 12 Pierogies (#778), frozen
- 1/2 cup tomatoes, chopped
- 2 Tbsp. lime juice
- 1 1/2 tsp. ground cumin
- 1/4 cup cilantro, chopped
- 2 cloves garlic, chopped
- 1/4 cup onion, chopped
- 1 Tbsp. olive oil
- Salt & pepper to taste
Preparation
Step 1
1. Prepare pierogies according to package directions.
2. Sauté garlic, onion, pepper and green chilies in pan with olive oil. Add beans during the last minute of sautéing. Sprinkle with salt and pepper (to taste) and add cumin; stir well.
3. Serve over pierogies and garnish with cilantro, tomatoes and lime juice.
