Simmered Jerk Chicken

Ingredients

  • 1 Cup Water
  • 1/2 Cup Low sodium soy sauce
  • 2 tbsp sugar
  • 2 tbsp rum or cooking sherry
  • 2 onions, chopped
  • 4 tsp dry jerk seasoning
  • 1 (3-4 lbs) broiler chicken, skinned & cut into serving peices
  • 1 (4 oz can) sliced water chestnuts, drained

Preparation

Step 1

combine water, soy sauce, rum (or sherry), onions, in dutch oven or large skillet and bring to a boil. Stir in jer seasoning then add chicken. Spoon mixtures over chicken it should barely cover it. Bring to a boil, reduce heat and simmer for 15-20 mins with lid on. Remove cover, turn chicken and simmer for 15-20 mins more. Add water chestnuts and cook 1-2 mins more.

Serve with white rice.
