CHICKEN SATAY

Ingredients

  • 3 boneless skinless chicken breast
  • 4 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 tsp minced gingerroot
  • 2 tsp liquid honey (or corn syrup)
  • 3 cloves garlic, minced
  • 1 tsp each ground coriander and cumin
  • Pinch hot pepper flakes

Preparation

Step 1

Cut chicken lengthwise into thin strips; thread onto soaked wooden skewers.
Place in glass baking dish.

Whisk together oil, soy sauce, lemon juice, ginger, honey, garlic, coriander, cumin and hot pepper flakes; pour over chicken, turning to coat well.

Cover and refrigerate for 1 hour.

Reserving marinade, cook chicken on greased grill over high heat or broil, basting with marinade, for 5 to 6 minutes per side or until no longer pink inside.
