PORK RED STEW

Ingredients

  • 2 tablespoons bacon drippings
  • 2 lb. boneless pork
  • 2 cups chopped onions
  • 1 cup chopped green pepper
  • 2 cloves garlic minced
  • 2 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 2 cans (14-1/2 oz.) chicken broth
  • 3 cups cubed and peeled potatoes cut into 1" squares
  • 2 cups fresh or frozen corn
  • 1 can garbanzo beans, drained

Preparation

Step 1

Heat bacon drippings in dutch oven. Cut pork into 1-1/2 cubes, brown over medium high heat. Stir in onions, green peppers, garlic, chili powder, oregano, salt, red pepper and chicken broth. Cover, cook over medium-low heat 45-55 minutes. Add potatoes, corn and beans, cover, cook 15-20 minutes longer.
