I got this recipe from Food.com, but I'm incorporating some of the suggested modifications that people wrote in their reviews

Ingredients

  • 1 1/2 cups beef broth (no or low sodium)
  • 1 1/2 cups water
  • 1 small onion, chopped
  • 2 cloves minced garlic
  • 2 (14 1/2 ounce) cans black beans
  • 1 (14 1/2 ounce) can refried black beans
  • 1 cup medium salsa (or more if you like spicier) - fresh or jarred
  • 1 teaspoon cumin
  • Chili Powder to taste
  • Cayenne Pepper to taste - if you like SPICE
  • Fresh Lime Juice (1/2 lime)
  • Frozen Corn
  • Green Chiles
  • Fresh Cilantro
  • sour cream (optional)
  • shredded cheese (optional)

Preparation

Step 1

1 Before beginning, drain and rinse two of the cans of black beans and set aside.
2 Put refried black beans into a bowl and add the salsa and cumin and other spices if using. Set aside.
3 In your pot, combine the broth, water, onion, garlic and bring to a boil.
4 Simmer till onions are tender.
5 Add the rinsed and mashed beans, corn, green chiles, lime juice and stir well.
6 Simmer at a low heat for half an hour or so.
7 Serve with a dollop of sour cream and topped with cheese.
