Summertime Pasta Salad

Ingredients

  • 3 c. uncooked bow shaped pasta (or whatever you have on hand)
  • 1/2 c. plain yogurt
  • 1/2 c. creamy italian salad dressing
  • 1/2 tsp. oregano
  • 1/2 c. cucumber sliced thin
  • 10 oz. can pitted black olives
  • 1 c. feta cheese, crumbled
  • 12 cherry tomatoes, quartered
  • 1 lg. tomatoe, chopped
  • 1 pkg. alfalfa sprouts

Preparation

Step 1

1. In lg. saucepan, cook pasta unovered in boiling water about 10 mins.

2. Immediately drain in lg. collander, rinsing with cold water. Drain well. Transfer to 2 qt. bowl. Set aside.

3. In small bowl, combine yogurt, dressing, & oregano. Stir 1/3 cup of dressing mixture into pasta.

4. Layer over pasta in order: cucumber, solives, cheese, tomatoes.

5. Spread rest of dressing mixture over top. Top with sprouts.

6. Cover tightly, chill up to 24 hours. Can top with croutons if desired when serving.
