Pineapple Bread

This is a great tasting loaf, fruity and nutty at the same time.

Ingredients

  • 2 eggs
  • 1/2 cup - melted butter
  • 1 cup - sugar
  • 1 cup - crushed pineapple with juice
  • 1 tsp. - vanilla
  • 2 1/2 cups - flour
  • 1 tbsp. - baking powder
  • 1/2 tsp. - baking soda
  • 3/4 tsp. - salt
  • 1/2 cup chopped walnuts

Preparation

Step 1

1. Preheat oven to 350°
2. Grease 9x5 loaf pan
3. beat eggs slightly
4. add butter and sugar, beat til smooth.
5. stir in pineapple and vanilla
6. in a separate bowl; put flour, baking powder, soda, salt and walnuts. Stir well and pour into pineapple mixtur.
7. Stir to moisten. Pour into greased pan and bake at 350° for one hour.


test with toothpick
let stand 10 minutes.
remove from pan
cool and wrap
