Penne with Sausage & Parmesan Cream Sauce

This is a pasta dish that you'll want to make over and over again. Add a fresh green salad and crusty French bread to make this a meal.

Ingredients

  • 1 lb. penne pasta
  • 1 tsp vegetable oil
  • 1 lb. sweet or hot Italian sausage, casings removed
  • 2 large cloves of minced garlic
  • 1 lb. spinach, stemmed, torn, washed and drid
  • 1 cup half & half cream
  • Salt and papper to taste
  • 1 1/4 cup grated parmesan cheese

Step 1

Cook pasta until al dente and drain. In skillet, over medium heat, crumble sausage and cook. Add garlic and cook for 1 minute. Add spinach in batches, adding more as it wilts. Stir in cream, salt and papper. Simmer 5 minutes. To the cream mix, add 1 cup Parmesan cheese and the cooked pasta. Cook 2 minutes more. Serve with remaining Parmesan.
