Ingredients
- 2 medium tomatoes
- Salt and pepper
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 tablespoon garlic-flavored or plain olive oil
- 1/2 cup shredded part-skim mozzarella cheese
- 2 tablespoons shredded Parmesan cheese
- 1/2 cup chopped fresh basil
Preparation
Step 1
Preheat grill to medium-high. Thinly slice tomatoes and sprinkle with salt and pepper; set aside. Brush chicken on each side with oil. Grill chicken until done, about 5 minutes per side. Meanwhile, combine mozzarella, Parmesan and basil in a small bowl; set aside. With chicken still on grill, cover it with sliced tomatoes and sprinkle with cheese mixture.
Lightly cover with aluminum foil and cook until cheese melts, about 1 minute.
