Chutney (Julie's mango chutney)

Ingredients

  • 10 Large mangoes
  • 2 Cloves of garlic
  • 1 Onion
  • 1 cup Seedles raisins
  • 1 cup Cider vinegar
  • 1 cup Fresh lime juice
  • 1 1/2 cups Brown sugar (packed)
  • 1/2 t Crushed dried red chili peppers
  • 1 T Celery seeds
  • 1 T Whole mustard seeds
  • 2 T Grated fresh grated ginger root
  • 1 1/2 t Salt

Preparation

Step 1

Cut mango into small pieces and put into bowl. Peel and chop garlic and onion add mangoes with rest of ingredients
Cover and let mixture stand overnight
Cook slowly, uncovered, for about 3 hours or until thick
Cool and put into containers to freeze, or hot pack into sterilized jars
