X-mas Rum Balls

Ingredients

  • Dry Ingredients:
  • 8 c vanilla wafers - crushed (approx. 3 boxes)
  • 2/3 c sifted cocoa
  • 3 c sifted icing sugar
  • 2 c finely chopped pecans
  • pinch of salt
  • Wet ingredients:
  • 1 1/2 c Rum (I like dark rum)
  • 1 1/2 c melted butter
  • 1 small container sour cream (approx. 1 c)
  • 1/2 c almond paste
  • 2 x 350 gram semi-sweet choc chips melted

Preparation

Step 1

Mix dry ingredients together, Add melted butter & mix well. Add rum & mix well again.
In separate bowl, mix almond paste, sour cream & melted chocolate. Mix extremely well. Works best if almond paste is soft to start.
Add all ingredients together in large bowl & mix well. Refridgerate, covered, for about 1 hr.
Roll into balls, then roll balls in choc. sprinkles, or good quality cocoa or icing sugar. Freeze balls individually before packing into containers.
