Rusty's Italian Ribs

This marinade is one we have always used for Lamb Chops and Lamb Racks.
My husband decided to try it on Baby Back Ribs and it is wonderful!

Ingredients

  • 1/2 cup olive oil
  • 2 cloves garlic minced
  • 2 tbsp. chopped fresh rosemary
  • Salt and freshly ground black pepper
  • 2 racks baby back ribs, silver skin removed

Preparation

Step 1

Put all marinade ingredients in a small bowl. Use the back side of a wooden spoon to mash the garlic and rosemary into the olive oil.

Place the ribs in a large baking dish or half sheet pan and generously salt and pepper. Pour over the olive oil mixture and brush to coat both sides. Marinate in fridge for as long as possible, at least 2 hours.

Grill over a low flame for 30 to 35 minutes, depending on the size of the ribs. Baste with remaining marinade that's left in the pan until it's gone.

We serve it with a thin pasta tossed in olive oil, butter and Parmesan cheese.
