Ingredients
- 4 1/2 cups sugar
- 1 12-ounce can evaporated milk
- 1/2 teaspoon salt
- 1 pound milk chocolate bars, chopped
- 1 2-ounce package (2 cups) semisweet chocolate pieces
- 1 2-ounce jar marshmallow creme
- 1 cup chopped pecans or walnuts (optional)
- 1 teaspoon vanilla
- Chopped pecans or walnuts (optional)
Preparation
Step 1
1. Line a 13x9x2-inch baking pan with foil, extending the foil over edges of pan. Butter foil; set pan aside.
2. Butter the sides of a 3-quart heavy saucepan. In the saucepan combine sugar, evaporated milk, and salt. Cook and stir over medium-high heat until mixture comes to boiling. Reduce heat to medium; continue cooking and stirring for 10 minutes.
3. Remove saucepan from heat. Add milk chocolate, semisweet chocolate pieces, marshmallow creme, i cup nuts (if desired), and vanilla. Stir until chocolates are melted and mixture is combined. Using a wooden spoon, beat for 3 to 5 minutes or until mixture starts to become thicker.
4. Immediately pour fudge into the prepared pan; shake pan gently to spread fudge to edges of pan. If desired, sprinkle top with additional nuts. Cover and chill for 2 to 3 hours or until firm. Using the edges of the foil, lift fudge out of pan. Cut into rectangles. Makes 72 pieces.
EASY MOCHA FUDGE: Prepare as directed, except stir
2 tablespoons instant espresso coffee powder or coffee crystals
into the mixture with the vanilla. If desired, after spreading fudge
in pan, sprinkle top with additional instant espresso coffee
powder or coffee crystals and whole and/or coarsely chopped
chocolate-covered coffee beans. Chill as directed.
EASY ROCKY ROAD FUDGE: Prepare as directed, except after
spreading fudge in pan, sprinkle top with a mixture of 1 cup
semisweet chocolate pieces, i cup tiny marshmallows, and lk cup
chopped toasted walnuts. Press mixture lightly into fudge. Chill
as directed.
EASY CHOCOLATE-PEANUT BUTTER FUDGE: Prepare as
directed, except stir 1/2 cup peanut butter into mixture in saucepan
before bringing to boiling and substitute i cup chopped peanuts
for the pecans or walnuts.
