Cantaloupe Chicken Salad

Ingredients

  • Yogurt dressing:
  • 1/4 c vanilla Greek yogurt
  • 3 T mayo
  • 3 T lemon juice
  • 3/4 t coriander
  • Chicken salad:
  • 2 c chicken cubed
  • 1 c cantelope balls
  • 1 c honeydew balls
  • 1 stalk celery chopped
  • 1/4 c green onion chopped
  • 1/3 c cashews

Preparation

Step 1

Mix yogurt dressing ingredients to coat chicken mixture.

Prepare chicken mixture: first make melon balls. After making melon balls, dry them well on paper towel. Mix all dry ingredients together, reserving cashews. Coat gently with yogurt dressing. Stir cashews through just before serving.
