Ingredients

  • 10 oz fresh strawberries, pulsed in food processor finely chopped to yield 1 cup
  • 1 1/2 sticks unsalted butter, softened
  • 1 1/4 cups sugar
  • 1 egg
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 Tbsp. poppy seeds
  • 1 1 /2 tsp. baking powder
  • 1/2 tsp. table salt
  • Sparkling bright white sugar

Preparation

Step 1

Preheat oven to 350 degrees. Line baking sheets with parchment.
Cream butter andd sugar in mixer at medium speed until light and fluffy, about 5 minutes. Beat in egg, almond extract and vanilla.
Whisk together flour, poppy seeds, baking powder and salt. Beat into creamed mixture until combined. Add strawberries beating just to incorporate.
Drop dough with a 1 1/2 Tbsp. scoop onto baking sheets and sprinkle with sparkling sugar.
Bake until edges are set, approximately 16-18 minutes. Let cool for 5 minutes, then transfer to a rack.
