Ingredients
- Crust:
- 1 cup sifted flour
- 1/4 cup confectioners sugar
- 1/8 teaspoon salt
- 1/2 cup butter or regular margarine
- 1 cup sugar
- 2 tablespoons flour
- Filling:
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 eggs, slightly beaten
- 2 tablespoons lemon juice
- 1 tablespoon grated lemon rind
- Lemon Glaze (recipe follows)
- Lemon Glaze:
- 1/2 cup sifted confectioners sugar
- 1 tablespoon lemon juice
- 1 tablespoon melted butter or margarine
- 1 drop yellow food color
Preparation
Step 1
Combine 1 cup flour, confectioners sugar and 1/8 teaspoon salt. Cut in butter until mixture is crumbly. Press mixture into greased 11x7x1.5 baking pan. Bake in 325 degree oven 15 minutes.
Combine sugar, 2 tablespoons flour, baking powder, 1/8 teaspoon salt, eggs, lemon juice and lemon rind; mix thoroughly. Spread evenly over baked crust. Bake in 325 degree oven 25 minutes. Cool in pan on rack. Spread with Lemon Glaze. Cut in 1.25" squares.
Lemon Glaze: Blend ingredients until smooth.
