Ingredients

  • Pillsbury Refrigerator pie crust
  • 1 1/2 cups shredded mozzarella cheese
  • 5 Roma tomatoes
  • 1 cup loosely packed fresh basil leaves
  • 4 cloves garlic
  • 1/2 cup mayo
  • 1/4 cup Parmesan cheese
  • 1/8 teaspoon white pepper

Preparation

Step 1

Unfold pie crust and place in a 9 inch pie pan. Prebake crust according to directions. Remove from the oven. Sprinkle 1/2 cup mozzarella. Cool on wire rack. Cut tomatoes into wedges and drain on paper towel. Arrange wedges on top of melted cheese in pie shell. In processor combine basil garlic, cover and process until coarsely chopped. Sprinkle over tomatoes. In bowel combine remaining mozzarella, Parmesan, mayo and pepper. Spoon over basil mixture spread evenly. Bake at 375 for 35 to 40 minutes.
