Tzatziki

Ingredients

  • 1 long english cucumber
  • 1 1/2 cups balkan style yoghurt
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 green onion, chopped
  • 1 tsp. lemon juice
  • 1/2 tsp. white wine vinegar
  • pinch pepper
  • 2 tsp. dill
  • 1/4 tsp. dijon mustard

Preparation

Step 1

Lightly peel cucumber and cut into chunks. Lay on paper towel, cut sides up, sprinkle with salt and let stand about 10 or 15 minutes to bring liquid to surface. Pat dry.

Meanwhile, mix together remaining ingredients in a large bowl. Coarsely grate the cucumber and squeeze out excess moisture. Fold into mixture.

Can be refrigerated for up to 2 days.
