Broccoli (Spinach) Kugel

Can be made in a pie crust and used as a quiche.

Ingredients

  • 20 oz frozen chopped spinach or broccoli
  • 1 1/2 tablespoons margarine
  • 1 1/2 tablespoons flour
  • 1 cup milk
  • 3 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons onion soup mix
  • corn flake crumbs

Preparation

Step 1

1 defrost broccoli or spinach. If using broccoli cook briefly either in microwave or by steaming for a few minutes with a little water. Drain well.
2 melt margarine in a 3 quart pot, add flour and stir until pasty
3 immediately add milk and mix well
4 bring to a boil and simmer 1 minute until thickened
5 let cool for a few minutes
6 add eggs, mayo, onion soup mix and spinach or broccoli
7 pour into a greased 9 inch round pan
8 sprinkle with corn flake crumbs
9 bake at 350 degrees for 1 hour
