  • 1 unbaked pie shell (I use Marie Callendar's deep dish)
  • 3 large eggs
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 2 2/3 cups milk, scalded
  • 1 teaspoon pure vanilla extract

Pre-heat the oven to 350°F.

Grease a pie pan with butter, and add the pie shell. Perforate the shell with a fork along the sides and bottom.

Beat your eggs slightly, then add sugar, salt, nutmeg.

While whisking constantly, temper the eggs by slowly adding just enough hot milk to dissolve the sugar and turn the egg mixture into a hot liquid. Be sure to do this slowly so that the eggs do not scramble.
Then add the remaining hot milk, continuing to whisk, at a steady pace until incorporated.

Pour the filling into the unbaked pie shell. Bake for 35 to 40 minutes. Remove from oven and cool. Sprinkle the top of pie with fresh ground nutmeg and serve.
