Gazpacho

Ingredients

  • 2 cups tomato juice (or vegetable cocktail)
  • 1/2 red onion, minced
  • 1/2 green bell pepper, chopped
  • 1/2 cucumber, peeled and chopped
  • 1 cup tomatoes, chopped
  • 1 green onion, chopped
  • 1 clove garlic
  • 3 tbsp fresh lemon juice
  • 2 tbsp red wine vinegar
  • 1/4 cup cilantro
  • 1 tsp dried basil
  • 1 tsp white sugar
  • sea salt & pepper to taste
  • dash or two of hot sauce

Preparation

Step 1

Blend all ingredients in a blender or food processor until well-combined but still slightly chunky. Chill at least 2 hours before serving.
