Marvelous Chicken Pot Pie (Mom's)

Ingredients

  • 1/3 cup butter
  • 1 onion, diced
  • 1/3 cup flour
  • 2 celery ribs, sliced
  • 1 3/4 cup chicken boullion
  • 2/3 cup milk
  • 2 cups diced chicken
  • 2 medium potatoes
  • 2 carrots
  • 1 cup frozen peas

Preparation

Step 1

This is so easy--and so good! First, zap the potatoes til cooked. Peel and cook the carrots.
Melt the butter and sauté onion and celery in it.
Add flour, milk, and boullion.
Throw in the chicken and peas. By now, the potatoes and carrots should be cool enough to chop. Do--then add them to the pot. Voila!
Turn into piecrust-lined pieplate, and top with the second crust. Pierce the crust, then bake at 425 for 30 minutes.

TO COOK FROZEN PIE: PLACE FROZEN PIE IN OVEN AND THEN PREHEAT TO 450 DEGREES. AFTER REACHING TEMP, BAKE FOR 15 MINUTES. TURN OVEN DOWN TO 350 AND CONTINUE BAKING FOR ABOUT 30 MINUTES OR SO. TURN OVEN DOWN AGAIN--TO 325 DEGREES AND COOK ABOUT 35-40 MINUTES (YOU'LL SEE IT BUBBLING). LET IT SIT A FEW BEFORE SERVING.
