Chipotle Shrimp Fajitas

Ingredients

  • 2 T vegetable oil
  • 3 cloves garlic, minced
  • 1 can (28oz) fire-roasted diced tomatoes
  • 2 chipotles in adobo sauce, chopped
  • 2 T adobo sauce
  • 2 lb lg shrimp, peeled, deveined & cut into 1/2" pieces
  • Salt to taste
  • Corn tortillas, warmed

Preparation

Step 1

1. Heat vegetable oil in lg nonstick skillet over med heat.
2. Add garlic & cook 1 min
3. Reduce heat to med-lo; stir in tomatoes, chipotles & sauce. Simmer covered for 3 min.
4. Add shrimp & simmer until shrimp are cooked thru, ~4min.
5. Season w/salt to taste. Serve w/warmed corn tortillas.
