Ingredients
- 3 Bacon strips,diced
- 2 small onions, chopped
- 3 garlic cloves, minced
- 2 1/4 t ground ginger or 3 T minced fresh gingerroot
- 4 cans (15 ounces each) great Northern beans, rinsed and drained
- 1/2 cup apple cider or juice
- 1/2 cup salsa
- 1/2 cup molasses
- 1/2 cup packed brown sugar
- 1/2 cup crushed gingersnaps, optional
- 1 T dijon mustard
- 1/2 t dried thyme
- 1/2 t ground allspice
- 2 bay leaves
Preparation
Step 1
In a skillet, cook bacon until crisp. Remove with slotted spoon to paper towels Drain, reserving 1 t drippings. In the drippings, saute onions, garlic and ginger until tender In a bowl, combine remaining ingr. Stir in onion mixture and bacon. Transfer to a greased 2 qt baking dish.
uncovered bake 30-35 minutes longer or until beans reach desired thickness. Discard bay leaves
