PICKLED PLUMS

Ingredients

  • 1 kilo of plums
  • 500 ml vinegar
  • 500 ml sugar
  • 6 cloves
  • 6 whole allspice
  • 1 stick of cinnamon
  • rind 1 lemon

Preparation

Step 1

1. Wash plums and remove stalks. Prick with a needle to prevent skins from bursting.
2. Boil vinegar, sugar and spices for 5 minutes.
3. Pour over plums in a bowl.
4. Turn occasionally and leave overnight.
5. Drain and bring syrup to a boil and again pour over plums. Leave overnight.
6. Next day, pack plums in hot sterilized jars.
7. Bring syrup to a boil and remove spices and pour over plums leaving 1/8 headspace.
8. Seal immediately.
