Grammy's Irish Soda Bread

Ingredients

  • 4 cups flour
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 heaping teaspoon baking soda
  • 1 cup raisins
  • 3 eggs
  • 1 pint sour cream
  • caraway seeds (optional)

Preparation

Step 1

Mix dry ingredients in a large bowl, and plump raisins in warm water.
Mix the eggs with sour cream and add to dry ingredients. Drain the raisins and add them in. Dough should have a sticky consistency. Remove half the dough mixture and put on a floured board. Knead. Makes 2 loaves. Place on a cookie sheet.

Bake at 350 for 45 minutes. Bread is done when you knock on the bottom, and it sounds hollow.
