Ingredients
- 1 envelope unflavored gelatin
- 1/2 c sugar
- 1/4 t salt
- 4 egg yolks
- 4 egg whites
- 2 c whipping cream whipped(1 is for topping),
- 1 /c key lime juice
- 1/4 c water
- 1 t grated lime peel
- few drops green food coloring
- 1/2 c sugar
- 1 baked pie crust
Preparation
Step 1
mix gelatin, sugar, & salt in a sauce pan. Beat together egg yolks, lime juice, & water. Stir into gelatin mixture, cook over med heat stirring constantly just till mixture comes to a boil. Remove from heat, stir in grated peel, add food coloring till pale green in color. Chill, stirring occasionally till mixture mounds slightly when dropped from a spoon. Beat egg whites to soft peaks form, gradually add 1/2 c sugar beating to stiff peaks. Fold gelatin mixture into egg whites, fold in whipped cream, spoon into baked pastry shell, chill till firm. spread top with remaining cream
