RED BEANS & RICE WITH SMOKED SAUSAGE

Ingredients

  • 3 tablespoons vegetable oil
  • 1 medium onion chopped
  • 1 can (4 oz.) chopped green chilis
  • 3/4 cup uncooked rice
  • 1 cup water
  • 1 beef bouillon cube
  • 1 can red beans
  • 1/2 cup shredded Monterey jack cheese
  • 1 lb. smoked sausage

Preparation

Step 1

In medium saucepan, heat oil over medium high heat, add onion and chilies and saute 3 minutes. Add rice, water, and bouillon cube. Bring to a boil. Reduce heat, simmer covered, 10 minutes until rice is tender. Stir in beans, cheese and smoked sausage and pepper sauce.
