Strawberry Cream Puffs

Ingredients

  • Filling:
  • 1/4 cup butter or margarine
  • 1/8 teaspoon salt
  • 1/2 cup sifted all purpose flour(sift flour before measuring)
  • 2 large eggs
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanila extract
  • 36 medium strawberries,washed and hylled
  • Powdered sugar

Preparation

Step 1

.
1.Preheat oven to 400 degrees. Make cream-puff dough,in small sauce pan, slowly bring 1/2 cup water with the butter and salt to boiling.

2.Remove from heat.With wooden spoon,beat in flour all at once.

3.Return to low heat,continue beating until mixture forms ball and leaves side of pan.

4.Remove from heat.Beat in eggs,one at a time, beating hard after each addition until smooth.

5.Continue beating until dough is shiny and breaks into strands.

6.For cream puffs,drop dough by slightly rounded teaspoonfuls, 2 inches apart,onto ungreased cookie sheet.

7.Bake until puffed and golden brown--20 to 25 minutes.

8.Let cool completely on wire rack away from drafts.

9.Meanwhile,make filling,beat cream with 2 tablespoons of powdered sugar until stiff.Stir in vanilla.

Refrigerate covered.

10.With sharp knife,cut a slice from top of each puff. Fill each with a
scant teaspoonful of whipped cream, press a strawberry into each,replace tops.
Refrigerate if not severing at once. 11.To serve,sprinkle with powdered sugar.
Makes 36 puffs
