BLACK BEANS WITH CILANTRO CHICKEN

Ingredients

  • 1 tbsp cooking oil
  • 4 chicken breasts, diced
  • 1/4 tsp salt
  • 1/4 tsp cayenne pepper
  • 6 green onions, chopped
  • 1 cup celery, diced
  • ½ cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz.) black beans, drained
  • 1 cup frozen corn
  • 2 tsp fresh cilantro, chopped
  • ½ cup salsa
  • 1/4 cup chicken broth

Step 1

Heat a large skillet heat a dutch oven over medium high heat. Place the chicken in the hot pan and season with the salt and pepper. Brown on all sides, then remove from the pan, drain, and set aside. Add the onions, celery, and bell pepper to the pan and cook until the onions are tender. Add the garlic and continue to cook for 1 minute. Add the beans, corn, cilantro, and salsa. Stir to mix well. Return the chicken to the pan, cover, and let simmer over low heat 20 to 30 minutes or until chicken is completely done. Use the chicken broth to thin the mixture, if necessary.
