Ingredients
- 3/4 c long grain rice
- 1 t salt
- 4 c whole milk
- 1/2 c sugar
- 1 t almond extract
- 1 pint heavy cream - whipped & sweetened
- 1/2 cup chopped blanched almonds
- 1 whole almond with skin
Preparation
Step 1
Cook rice & salt in milk in double boiler until rice is soft & thick (approx. 1 1/2 hrs.). Add sugar & almond extract. Chill. Add almonds & whip cream. Serve with a berry compote or sauce (raspberry or strawberry).
