Baked Chicken Thighs w/Panko

Ingredients

  • 8 to 10 chicken thighs (skinless & boneless)
  • 1/3 cup Panko bread crumbs
  • 1/2 teaspoon paprikea
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon parsley
  • 1/2 cup wine (white or Marsala)
  • 1/4 cup Parmesan cheese
  • olive oil
  • salt & pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees. Combine panko, paprika, garlic, parsley, salt, pepper and cheese in a bowl. Coat dish with non-stick cooking spray. Dredge chicken in mixture and place in a baking dish. Drizzle with olive oil. Cover with foil and bake for 30 to 35 minutes. Remove foil and coat with wine. Replace foil and bake an additional 20 to 25 minutes. Uncover and bake until done, about another 10 to 15 minutes.
