Ingredients
- 1 lb. fresh broccoli
- 2 c whole small onions or 3 medium onions quartered
- 4 T butter
- 2 T flour
- 1 c milk
- 1 4oz. pkg. cream cheese
- 2 oz. shredded cheddar cheese
- 1 c soft bread crumbs
Preparation
Step 1
Cut broccoli and onions and boil fo 10 min. Drain well. In pot, melt 2 T butter, blend in flour, 1/4 t salt and dash of pepper. Add milk. Cook and stir until thick and bubbly. Reduce heat. Blend in cream cheese until smooth. Place veggies in casserole, pour sauce over, mix lightly. Top with cheddar cheese. Bake in 350 for 30 min.
Meanwhile, melt remaining butter and toss with crumbs. Sprinkle crumbs on top of casserole and bake uncovered until heated through, about 30 min. more.
Note: you can make ahead and freeze or chill in fridge. Do not put bread crumbs on top until after your have cooked the casserole for the first half hour.
