Mexican Mixture

Ingredients

  • (Makes 2 servings)
  • 1 cup cooked brown rice
  • 1/2 cup Pressure Cooker Black Beans (page 190) or drained and rinsed canned black beans
  • 1/2 avocado, diced
  • 1/4 cup diced tomato
  • 3 tablespoons grated cheddar cheese
  • Salt, to taste (optional)
