Ingredients

- 1 cup cooked brown rice
- 1/2 cup Pressure Cooker Black Beans (page 190) or drained and rinsed canned black beans
- 1/2 avocado, diced
- 1/4 cup diced tomato
- 3 tablespoons grated cheddar cheese
- Salt, to taste (optional)
