Ingredients
- 1 1/2 Lbs medium potatoes , cut into eighths or mini potatoes, halved
- 1/3 cup olive oil
- 1/4 cup Dijon mustard
- 1 T dried oregano, basil or rosemary leaves
- salt and pepper to taste
Preparation
Step 1
Place potatoes in large baking dish or roasting pan
Combine remaining ingredients. Drizzle over potatoes .
Toss to coat
Bake at 425 for 30 or 40 minutes stirring often until potatoes are tender
