One-Pan Potatoes and Chicken

Ingredients

  • 2 T. vegetable oil
  • 8 medium red potatoes, thinly sliced
  • 1 lb. boneless, skinless chicken breast halves, cut into thin strips
  • 1 medium red bell pepper, cut into thin strips
  • 1 tsp. salt

Preparation

Step 1

Heat oil in 12-inch nonstick skillet over medium heat. Add potatoes, chicken and bell pepper to skillet. Sprinkle with salt.

Cook 15 to 20 minutes, stirring frequently, until chicken is no longer pink in center and potatoes are tender.
