Chewy Oatmeal Cut-Out Cookies

Ingredients

  • 1 cup Butter
  • 3/4 cup Brown Sugar
  • 1 Egg, large
  • 2 tsp Vanilla
  • 3/4 tsp Salt
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Ginger, or less, depending on your taste
  • 1 cup Rolled Oats
  • 1-1/2 cups White Whole Wheat Flour
  • 1 cup Flour

Preparation

Step 1

Cream butter and sugar. Add egg and beat well.

Add the vanilla, salt, spices and baking powder. Mix well.

Stir in oats and flour. (Don't worry if it looks dry, it will all come together nicely.)

Divide into two balls. Flatten disks and wrap each in plastic.

Refrigerate for 30 minutes.

Heat oven to 350 degrees.

Roll out each dough disk to 1/4 inch or your desired thickness. Cut with cookie cutters.

Place on a greased cookie sheet, or on parchment paper.

Bake for 12 to 15 minutes - less time for chewy, more time for crispy.
