5-Bean Chili

There is no meat in this chili, which turns some people off initially. However everyone who has tried it has commented that they didn't actually miss it.

Ingredients

  • 2 cans Dark Red Kidney Beans
  • 2 cans Light Red Kidney Beans
  • 2 cans Pinto Beans
  • 1 can Red Beans
  • 1 can Black Beans
  • 1 (small) can Ro*tel Diced Tomatoes & Green Chilis (pick the spiciness that you like, just be aware that these tend toward the more hot side)
  • 1 can Italian Style Stewed Tomatoes
  • 2 cans Mexican Style Stewed Tomatoes
  • 1 package McCormick Chili Seasoning Mix (again, choose your preferred spice level)

Preparation

Step 1

1) Open all of the cans of beans, drain, and pour into a large pot.

2) Pour all cans of tomatoes (juice and all) into the same pot.

3) Add the spice package and mix.

4) Simmer for 1 - 2 hours, can be kept on low heat for much longer.

Alternately: follow steps 1-3 above, only putting the ingredients into a Crockpot. Cook on low for 8 hours or high for 4 hours.
