Spinach Noodle Kugel

Can use a 16ounce bag frozen spinach instead of fresh.

Ingredients

  • 16 ounces fine noodles
  • 1 pound fresh spinach
  • 2 onions diced
  • 2 tablespoons oil
  • 6 eggs, beaten
  • 1/2 cup oil
  • salt to taste

Preparation

Step 1

1 cook noodles for 5 minutes, set aside
2 wash spinach and remove stems cook in water, drain, chop and add to noodles
3 saute onions and add to noodles
4 stir in eggs, oil, and salt
5 bake in a 9 by 13 pan at 350 degrees for 40 minutes
