Chopped Salad

Ingredients

  • 1 celery rib
  • 1 gr bell pepper
  • 1/2 sm sweet onion
  • 2 med tomatoes
  • 1/2 med cucumber
  • 1/4 c. parsley
  • Lettuce leaves
  • 1 tbs canola oil
  • 1 1/2 tsp lemon juice
  • 1 1/2 tsp honey
  • 1/2 tsp basil leaves minced

Preparation

Step 1

Combine chopped vegetables. Blend ingredients for dressing. Place lettuce leaf on serving plate and top with chopped vegetables and drizzle with dressing.
